The perils of Cape Cod muffins

I had the best of intentions this morning. I decided to bake a few goodies, hoping to share a delicious treat with our friends at Cape Cod. And then this happened. The edges of the cake started to burn so I tried to pop it out of the hot pan, I used the wrong flour for my muffins (at least that’s the diagnosis I believe is most accurate, or could be the baking powder) which resulted in a gummy texture and NO browning.

It’s a little heart breaking right? Getting invested, finding yourself incredibly disappointed, and fighting to accept an unacceptable outcome.

Such is life, the constant process of adjusting expectations, embracing the highs while succumbing and learning from the lows. Now what was I rambling about before, muffins?
